An investigation performed to isolate fungi and bacteria from different food sources . The recovered microorganisms used as test organisms to evaluate the effect of essential oils isolated from the leaves of five mango cultivars in an attempt to use these oil as preservative materials .Staphylococcs aureus and Escherichia coli were the most sensitive microorganisms tested in the presence of the oil extracted from Alphonso cultivar
