The present work was conducted to study the physical and chemical properties of wastes (solids and liquids) generated during processing of some fruits and vegetables (kernels and peels of mango, peels and pulp of orange, kernels and pomace of apricot and strawberry pomace). Phytochemicals profiles and dietary fiber composition of dried solid waster was determined as well as evaluation of their antioxidant activity
