This study was carried out in Faculty of Agriculture Fayoum Cairo University . The obtained results can be summmarized as follows : It was found that physicochemical characteristics to dates (Siwi and Amhat) slightly different from where moisture proteins fibers ashes total soluble solids and sugars . While element potassium recorded the highest level in both varieties
