The thesis investigated the effect of replacement of wheat flour with different percentages of blends of cassava or sweet potato roots and defatted soybean flours in bread making . The prolonged soaking (5 days) of cassava roots followed by oven - drying (60ْْC) was the best method for removing hydrocyanic acid (HCN)
