The present work was initiated by screening different local and foreign cultures for their Ý - galactosidase production to select the most potent culture and it was found that showed the highest Ý - galactosidase activity after 2 Lactobacillus acidophilus NRRL 4495 days and it was seen that the enzyme was intracellular
