Dissertation note: Thesis (Ph.D.) - Cairo University - Faculty of Veterinary Medicine - Department of Microbiology Summary: In the present study a total of 328 fish and fish product samples were subjected to mycological examination and the results revealed that the samples were highly contaminated with moulds belonging to the genera aspergillus, penecillium, fusarium, cladosporium, alternaria, rhizopus and mucor spp.. nearly all of isolated moulds and yeasts from the present samples showed a significant proteolytic and lipolytic activity
