Oregano (Origanum syriacum L.) is an aromatic plant of the mediterranean flora that has been commonly used for medical purposes. Oregano is rich in polyphenols and flavonoids and carotenoids contents are represented by mg/g on dry weight respectively. Eleven phenolic compounds and eight flavonoids separated by HPLC, the major phenolics were catechol, catechin acid and pyrogalol
