Striaght grade wheat flour at 80% extraction rate and different flour mill streams (fractions) of break stage (B1,B2, B3, B4 and B5) and reduction stage (C1 , C2 , C3 , C4 , C5 , and C6) obtained from four commercial flour roller mills [Mutanaby (M1) , Khaerat (M2) Swera (M3) and Khlood (M4) in Iraq were evaluated for their physical and chemical properties
