The purpose of this study is to measure the antimicrobial activity of aqueous extract and essential oils of some medical plants: thyme (Thymus vulgaris), ginger (Zingiber officinale), corinander (Coriandrum stativum), mustard (Brassica alba), Chamemil (Matricaria chamomilla), marjorum (Majorame hortensis), nigella (Nigella sativa) and Liquorica (Glycyrrhizza glabra) through the following experiments:- Determination of antimicrobial effect of some medical plants essential oils and aqueous extracts. Minimum inhibitory concentration of essential oils and aqueous extracts against different microorganism. The effect of essential oils on bacterial growth pattern. Determination activity of thyme essential oil and aqueous extract against bacterial cells by (TEM). Sensory evaluation of essential oils in herby white chees as a food model system.The data could be summarized as follows: It could be concluded that all tested essential oils exhibit high significant inhibition effect on both G+ and G- strains used in this study, also there was a high significant differences between the concentrations of essential oils examined. Regardless, the oil concentration the same trend of growth inhibition of the examined essential oils was recorded using both methods. Thyme and coriander essential oils were the most active against all bactrial strains tested in this study as they completely inhibited their growth at concentration of 40 (æl/well). Marjoram exhibited a good antibacterial activity against all strains tested, While, the essential oils of mustard, chamomile and nigella showed a moderate effect, also the lowest effect was recorded for liquorice. Meanwhile, The antifungal activity of tested essential oils showed a higher effect against yeast strains than mould strains
