Globe artichoke (Cynara scolymus L.) is a plant recognized in herbal medicine where foliage leaves are utilized for production of commercial extracts used as hepatoprotective and choleretic in food supplements..A comparative study between globe artichoke standard extracts (root, bract, receptacle and leaf) was performed. The results revealed that the edible parts (receptacle and bracts) contain the highest amount of the chlorogenic acid followed by leaves and roots. Another estimation of anti-oxidant phenolic acids performed by HPLC against standard acids indicated that leaves contain the highest proportion of total acids more than bracts or roots. Our results evidenced high proportion of total polyphenols in the edible receptacles followed by bracts. The medicinally used leaves contain lower proportion followed by roots.The chemical analysis of different artichoke extracts when estimated by HPLC-DAD-ESI-MS resulted in detection of phenolic acids, sesquiterpens, saponins and others. In addition to the anti-oxidant, hepatoprotective constituents viz, polyphenols, the antihyperlipidemic , antispasmodic sesquiterpens grossheimen and cynaropicrin were detected.Estimation of the nutritive content of several parts revealed rich source of folic acid, vitamins C, K, B1, B2, B6, A, E. It is also considered rich source for minerals as cupper, calcium, potassium, iron, manganese and phosphorous. Dietary fiber was found significant (7.2gm/100gm) in the receptacles and the soluble indigestible fiber (inulin) was found (41.2mg/gm dry weight) in the same part which has beneficial role as insulemic sugar and as immune system enhancer
