Dissertation note: Thesis (M.Sc.) - Cairo University - National Institute of Laser Enhanced Science - Department of Laser Application in Biotechnology Summary: The main objectives of work are to experiments and measurements for the physical, chemical, optical and electrical properties of strawberry fruits. Strawberries were classified into three grades according to the variety of strawberry (Festival, Fortona and Red marline). The strawberry fruits were exposure by visible laser to detriment optical and electrical signal reflections of strawberry at different properties of visible lasers543.5and 632.8 nm and power 4mW. The samples were classified into six kinds of defects of strawberry according to codex specification of strawberry. It found that. Physical properties: The average value of volume for all strawberry varieties were (11.63, 16.446 and 12.262 mm3) festival, fortona and red marlin verities respectively so the high value of physical properties was fortona variety while the low value is festival variety, but the physical properties of red marlin variety intermediate between value of fortona and festival variety. Chemical properties: The average value of Brix and PH for all strawberry varieties were (7.5, 7.14 and 6.78) and (3.6, 3.45 and 3.42) festival, fortona and red marlin verities respectively so the high value of physical properties (Brix) was festival variety while the low value is red marlin variety, but the chemical properties of fortona variety intermediate between value of fortona and festival variety. Optical properties. The high values of reflection intensity for all strawberry varieties were from control samples (standard) for festival variety (36.42 and 40.41lux) respectively for two types of wave longs laser, the value of reflection intensity were gradual decreased form (standard, mold, insect green tip, white shoulder and green of strawberry defects for all varieties of strawberry
