Dissertation note: Thesis (M.Sc.) - Cairo University - Faculty of Science - Department of Zoology Summary: Obesity is mostly accombined with uptake supplementary minerals and vitamins to compensate for unbalanced diet. Thus, the present study aimed to investigate the effect of dietary chitosan at two different doses (400 and 800 mg), vitamin A (11 mg), vitamin E (350 mg) and calcium (10 g) per kg of High fat diet (HFD) against the retrograde effects caused by HFD male albino rats.Twenty five Sprague-Dawaly male rats were used as experimental animals. HFD intake caused significant elevations in body weight gain (BWG), food intake, relative weights of heart and liver. In addition, HFD caused an increase in the serum levels of biochemical parameters including total cholesterol, triglycerides, low-density lipoprotein cholesterols, very low-lipoprotein triglycerides, urea, creatinine, and malondialdehyde, as well as serum activities of alanine and aspartate aminotransferases, alkaline phosphatase, and creatine kinase. On contrast, HFD caused remarkable reductions in the relative weight of kidney, serum levels of high-density lipoprotein cholesterols, total proteins, albumin, globulin, calcium, vitamins A and E, erythrocyte glutathione content, and superoxide dismutase activity. In addition, HFD caused an increase in the serum levels of biochemical parameters including total cholesterol, triglycerides, lowdensity lipoprotein cholesterols, very low-lipoprotein triglycerides, urea, creatinine, and malondialdehyde (P<0.001), as well as serum activities of alanine and aspartate aminotransferases, alkaline phosphatase (P<0.001), and creatine kinase (P<0.01). However, the incorporation of chitosan together with calcium, vitamins A & E to the HFD substantially mitigated the adverse effects of HFD on most of the studied variables. In conclusion, chitosan has an ameliorative role induced by HFD specially in presence of vitamin A & E and calcium
