Dissertation note: Thesis (M.Sc.) - Cairo University - Faculty of Agriculture - Department of Agricultral Biochemistry Summary: This research was applied to study the protective effect of globe artichoke receptacles and bracts against synthetic food additives. The chemical composition and biological values were studied. The results of proximate analysis revealed that the percent of moisture, total lipid, crude protein, total carbohydrate, crude fiber and ash were 94%, 3.84%, 18.7%, 42%, 26.68% and 8.77% for receptacles respectively, and 94.27%, 1.6%, 14%, 30.20%, 47.3% and 6.97% for bracts respectively. The mineral content was found to be Calcium (80 ppm), Sodium (310 ppm), Magnesium (149.5 ppm), Potassium (1578 ppm), Zinc (1,37 ppm), Phosphorus (0.03 ppm) and Copper (0.76 ppm) for receptacles, and Calcium (112.5 ppm), Sodium (204 ppm), Magnesium (133.5 ppm), Potassium (835.5 ppm), Zinc (1.3 ppm), Phosphorus (0.02 ppm) and Copper (0.47 ppm) for bracts. Phenolic burden of globe artichoke in bracts ethanolic extract was higher than other extracts with value 56.3 og GAC/mg. Quantification of phenolic profile for ethanolic and aqueous extracts was carried out by HPLC. Results showed that the bracts ethanolic extract was richer than receptacles in phenolic compounds, thirteen phenolic compounds were found in bracts extract and catechin was the major one (16.04 mg.mL-1). GC-MS analysis were carried out for hexane and diethyl ether extracts of receptacles and bracts, results showed that the bracts hexane extract and receptacles diethyl ether extract contained the most organic compounds, they contained 17 and 16 compounds respectively, followed by bracts diethyl ether which contained 12 compounds
