The purpose of this study is to evaluate Beta carotene , vitamin E , vitamin C , proteins and some minerals like iron , calcium , potassium , phoshorous and sodium in six different Egyptian vegetables which are tomatoes , eggplant , lettuce , squash , carrots and cabbage . This study is carried on both organic and conventional vegetable
