The aim of this study was measuring and determination of the optical properties using visible laser , image processing according to color properties and Fluorescence from olive oil during maturity stages of olive ( Arbequina variety ) . The obtained results are as follows : Stage one was high reflection intensity percentage or low absorption intensity percentage followed with high moisture content and low oil content percentages
