Naringinase (EC 3.2.1.40), is an enzyme complix consisting of Ü-L-rhamnosidase (EC 3.2.1.40) and flavonoid-Ý-D-glucosidase (EC 3.2.1.21). Naringinase converts naringin to naringenin in a two-step process, to remove rhamnose and glucose from naringin and other glycosides to obtain rhamnose, glucose and the aglycone
