A two dimensional (2 - D), k f model for the analysis of the air flow distribution in 42 dryer designs was developed employing a computational fluid dynamics (CFD) package using COMSOL MULTIPHYSICS®. The most appropriate design with acceptable uniform air flow distribution was constructed and operated at the same operating conditions of the modeling. The model was validated by comparing the simulated velocity values with experimentally measured velocity values. The results showed a very good correlation coefficient of 0.9059 between predicted and measured velocity values. The drying kinetics of whole spearmint using different drying methods under various operating conditions were investigated.
