One hundred samples of frozen beef were collected from big stores in Cairo governorate , represented 25 samples each of imported and locally produced frozen fore and hind quarters The study was subjected for the determination of the pH - values , the efficiency of bleeding , the bacteriological examination and the sensory evaluation
