Dissertation note: Thesis (Ph.D.) - Cairo University - Institute of African Research and Studies - Department of Natural Resources Summary: The thesis investigated the effect of replacement of wheat flour with different percentages of blends of cassava or sweet potato roots and defatted soybean flours in bread making . The prolonged soaking (5 days) of cassava roots followed by oven - drying (60ْْC) was the best method for removing hydrocyanic acid (HCN)
