Dissertation note: Thesis (Ph.D.) - Cairo University - National Institute of Laser Enhanced Science - Department of Laser Applications In environmental Metrology Photo chemistry and Agriculture Summary: The aim of the present study was irradiation sesame oil for pantry storage using Gamma and Laser radiations then quality evaluation of sesame oil to prolong shelf life. Sesame Seed sample was obtained from the Agricultural Research Center, Field Crops Research Institute (FCRI) - Department of Oil Crops Research .Then sesame seed was extracted on cold press from Extraction Unit - National Research Institute to obtain sesame oil. Seven samples of sesame oil were irradiated three of them by Gamma Rays with dosses 2, 4and 8 (kGy), other three by Laser with different time 0.5, 1.0 and 1.5hr) and one sample without any treatment (control){. The total samples of sesame oil after irradiated were analyzed the physical and chemical properties. The obtained results were showed as following: Acid, Peroxide, Saponification and Rancimate values were increased by increasing storage time from 3 to 9 months, for irradiation doses from 0 to 8 kGy. While, that values were decreased by increasing storage time from 3 to 9 months. But, Iodine value was decreased by increasing storage time from 3 to 9 months, for irradiation doses from 0 to 8 kGy. While, they were found that Iodine and Reflective Index values were decreased by increasing storage time from 3 to 9 months. Also, the obtained results were showed as following: Acid, Peroxide, and Saponification values were increased by increasing storage time from 3 to 9 months, for irradiation of exposure time from 0 to 1.5 hr. While, that values were decreased by increasing storage time from 3 to 9 months. But, Iodine and Rancimate values were decreased by increasing storage time from 3 to 6 to 9 months, for irradiation of exposure time from 0 to 1.5 hr. While, It was found that iodine and Rancimate values were decreased by increasing exposure time of Laser from 0 to 1.5 hr..
