The present study was carried out to produce chitosan from shrimp and crab wastes. Three different demineralization treatments were used: 1M HC1/1h/1 baths, 1.5M HCI/24h/1 bath and 2M HCI/24h/1 bath. Chemical composition, yield, heavy metals contens and the physico-chemical properties of produced chitosan were measured. The role of the chitosan source and the demineralization process on the N-deacetylation reactions, yield and chemical composition is confirmed
