| Summary, etc. | Sugarcane bagasse (SB) is a lignocellulosic material contains high levels of insoluble dietary fibers that can be extracted using various treatments. This study set out to evaluate the impact of five treatments [NaOH, NaOH+H2O2, NaOH+H2SO4, PAA (peracetic acid) and NaOH+PAA] and the bleaching treatment on the physicochemical, structural, and functional properties of SB fiber. The effect of particle size reduction to <500 µm on the physicochemical and functional properties was investigated. Sensory evaluation was implemented to assess the most suitable incorporation level of SB-treated fiber during cake preparation. The obtained results reveal that the highest acceptable incorporating ratio of SB-treated fiber was 10%. |

| Summary, etc. | تعتبر مصاصة قصب السكر مادة ليجنوسليلوزية تحتوي على مستويات عالية من الألياف الغذائية غير القابلة للذوبان والتي يمكن استخلاصها باستخدام معاملات مختلفة. بدأت هذه الدراسة في تقييم تأثير خمس معاملات [NaOH، NaOH+H2O2، NaOH+H2SO4، PAA وNaOH+PAA] ومعاملة التبييض اللاحقة على الخواص الفيزيائية والكيميائية والخصائص الوظيفية للألياف. وتأثير تقليل حجم الجسيمات إلى<500 ميكرومتر على الخواص الفيزيائية والكيميائية والوظيفية. تم اجراء التقييم الحسي لتحديد أفضل نسبة يمكن اضافتها من الياف مصاصة القصب للكيك.وكانت أعلى نسبة مقبولة حسياً لدمج الألياف المعالجة 10٪. |
