The enzyme was stable Relative activity of purified enzyme towards short and long chain fatty acids was investigated as well , using p - nitrophenyl esters LII showed relative activities towards valereate , stearate and palmitate esters , respectively Also , substrate specificity of Mucor LII towards different oils indicated that it is highly active towards linseed oil coconut oil and corn oil and less active on sunflower
