Folate deficiency is a critical public health problem which affects generally all age groups worldwide and specially children and pregnant or lactating women.
In this study, we developed three different types of bio-fortified yoghurt, Y1 yoghurt fortified with Bifidobacterium bifidum, Y2 yoghurt fortified with mixture of Bifidobacterium bifidum and yoghurt starter culture (Streptococcus thermophillus and Lactobacillus bullgaricus), and Y3 yoghurt fortified with yoghurt starter culture (Streptococcus thermophillus and lactobacillus bullgaricus) which served as a control yoghurt.
The Animal design was designed of five groups of rats where (G1) was fed normal diet, the remaining four groups (G2, G3, G4, G5) were fed folate deficient diet for 14 days. Blood samples were withdrawn from all groups to detect its folate level at zero time.
Then for 14 days G1 continued to be administered standard normal diet and G2 continued to be administered standard folate deficient diet. The groups G3, G4, G5 continued to be administered folate deficient diet in addition to bio fortified yoghurt as follow; G3 was fed yoghurt Y1, G4 was fed yoghurt Y2, G5 was fed yogurt Y3. Biological investigation of rats (Body weight gain, Feed intake, FER) were assessed during the experiment period. Blood samples were collected at day 7 and day 14 day of yoghurt treatment to detect folate levels.
ELISA technique was used to analyze deconjugated folate (5- methyl tetra hydro folate) in the serum of rats. Microbiological quantification of probiotics bacterial cell in the refrigerated yogurt, feces and colonocytes was done. Levels of HGB concentration, HCT level, RBCS counts was detected in blood samples before and after the yoghurt treatment.
It was observed that all groups gain weight with different ranges indicating different responses to the treatment. It was observed also that feed intake in the group’s fed yoghurt is lower than other control groups. The investigation showed that FER varied little between groups with no overall statically significant difference.
حمض الفوليك ( فيتامين9 ب ) يلعب دورا مهما في حياه الانسان حيث انه يشارك في تصنيع الفيتامينات والنيوكليوتيدات وبعض الاحماض الامينيه . لا يستطيع البشر تصنيع حمض الفوليك لذلك يجب الحصول عليه خارجيا لمنع نقص حمض الفوليك الذي قد يؤدي الي عيوب الانبوب العصبي والامراض الاخري.
ذات الصله.لذلك يحاول الباحثون ايجاد طرق جديده لزياده تركيز الفولات الموجوده طبيعيا في الاطعمه.
ان تطبيق المزارع البكتيريه في تخمر الغذاء هو استراتيجيه جديده لزياده الفولات الطبيعيه .
نظرا لعدم توفر تركيبه مناسبه من حمض الفوليك للاطفال و نظرا لمعدلات الاستهلاك العاليه لمنتجات الالبان , لذلك قمنا في هذا العمل بتقييم اغناء هذه المنتجات بمكون البروبيوتك المنتجه للفوليت كمصدر فعال من حيث التكلفه , طبيعي , واكثر قابيليه للاكل وسيساعد ذلك علي تقليل مشاكل نقص حمض الفوليك.
وقمنا ايضا بتقييم قدره البروبيوتك علي انتاج الفولات في الزبادي وتقييم استقرارها في المنتج الغذائي .
