520			_aAgro-waste industries are looking for raw materials derived from sources of agriculture, such as plants or animals. A major by-product of soymilk and tofu is soybean residue (okara), a large quantity of okara produced annually pose a significant environmental problem. Adult male albino rats were divided into 10 groups: control group, yogurt group, okara group, and yogurt with 30%okara group, chloropyrfos group, cypermethrin group, yogurt with cypermethrin, yogurt with chloropyrfos group and fermented okara with chloropyfos group and fermented okara with cypermethrin group. Herein, we demonstrated yogurt supplemented with okara at 20 and 30% to enhance milk properties biological benefits as an alternative source. The chemical composition indicated that okara contains high contents of dietary fiber which contain cellulose, hemicellulose, and lignin, about 20-30% protein, 10-15% lipids, also contain small percentage from starch and simple carbohydrates. As well as 20% of Okara yogurt supplementation increases the potential antioxidants activity determined by DPPH and ABTS assays also phenolic and flavonoid compunds okara was characterized by high levels of coumarin, benzoic acid, E vanailic. Histopathological changes in the liver and kidneys of toxicity rats to a near-normal state. Fermented okara displayed powerful anti-toxicity action in comparison to yogurt only, in addition were reversing the histological abnormalities in the liver and kidenys of rats treated with pesticides to a state close to normal. In addition, the fermented yogurt/okara displayed anticancer activity against colon cancer and liver cancer cell lines and no significant cytotoxic effect was detected against fibroblast normal cells. Overall obtained data indicated that okara can act as a suitable replacement for digestible milk to reduce calorie intake. When added okara with yogurt, it can be improve digestion of protein, lipids and other nutrients as okara has high percentage of fibres.
520			_aدراسة تأثير المخلفات الزراعية الناتجة عن المواد الخام المشتقة من مصادر الزراعة مثل النباتات أو الحيوانات. أحد المنتجات الثانوية الرئيسية لحليب الصويا والتوفو هو بقايا فول الصويا (أوكارا)، حيث تشكل كمية كبيرة من الأوكارا المنتجة سنويًا مشكلة بيئية كبيرة. تم تقسيم ذكور الجرذان البيضاء البالغة إلى 10 مجموعات: المجموعة السالبيه، مجموعة الزبادي، مجموعة الأوكارا، الزبادي مع مجموعة أوكارا 30%، مجموعة كلوروبيرفوس، مجموعة سايبرمثرين، الزبادي مع سايبرمثرين، الزبادي مع مجموعة كلوروبيرفوس، الاوكار المتخمرة مع مجموعة الكلوروبيفوس، الاوكارا المتخمرة مع مجموعة سايبرمثرين. في هذة الدراسة، قمنا بعرض الزبادي المضاف إلى الاوكارا بنسبة 20 و30% لتعزيز خصائص الحليب والفوائد البيولوجية كمصدر بديل. أشارت التركيبة الكيميائية إلى أن الاوكارا تحتوي على نسبة عالية من الألياف الغذائية التي تحتوي على السليلوز والهيميسيلولوز واللجنين، حوالي 20-30% بروتين، 10-15% دهون، كما تحتوي على نسبة قليلة من النشا والكربوهيدرات البسيطة. كذلك فإن إضافة 20% من زبادي أوكارا يزيد من نشاط مضادات الأكسدة المحتملة التي تحددها فحوصات DPPH و ABTS كما تميزت مركبات الفينول والفلافونويد باحتوائها على مستويات عالية من الكومارين وحمض البنزويك وE الفانايليك. التغيرات التركيب التشريحي في خلايا الكبد والكلي لدى الجرذان السمية إلى حالة شبه طبيعية. أظهرت الاوكار المتخمرة تأثيراً قوياً ضد السمية مقارنة بالزبادي فقط، بالإضافة إلى عكس التشوهات النسيجية في الكبد والكليات لدى الجرذان السامة إلى حالة قريبة من الطبيعية. بالإضافة إلى ذلك، أظهرت الاوكارا المتخمرة نشاطاً مضاداً للسرطان ضد القولون. تم اكتشاف خطوط الخلايا السرطانية وسرطان الكبد ولم يتم اكتشاف أي تأثير سام للخلايا ضد الخلايا الليفية الطبيعية. أشارت البيانات الإجمالية التي تم الحصول عليها إلى أن الاوكاريمكن أن تكون بمثابة بديل مناسب للحليب القابل للهضم لتقليل السعرات الحرارية. عند إضافة الاوكارا مع الزبادي يمكن تحسين عملية هضم البروتين والدهون والمواد المغذية الأخرى حيث أن تحتوي على نسبة عالية من الألياف.
