Summary, etc. The present study aims to reduce higher level of HMF in date syrup. First trial is using γ -irradiation in reducing HMF in commercial syrup after processing. The second is minimizing HMF formation in date syrup during the processing itself using extraction methods. The obtained results showed that γ-irradiation reduced the HMF in date syrup, where irradiation dose (20 kGy) recorded the lowest HMF level with a reduction % of 46.96 % compared to the non-irradiated .The second experiment, it was proved that the extraction method has a great impact on HMF formation in date syrup, where the microwave method presented the lowest level of HMF (240.13 mg/ kg).

Summary, etc. تهدف هذه الدراسة الي بحث طرق لخفض مركب ال HMF في دبس البلح . الاستراتيجية الاولي: استخدام التشعيع الجامي في تقليل ال HMF في عينات دبس البلح التجارية بعد التصنيع . الاستراتيجية الثانية:هي تقليل تكون ال HMF في دبس البلح اثناء عملية التصنيع نفسها و ذلك باستخدام طرق استخلاص مختلفة . و لقد اظهرت النتائج المتحصل عليها في التجربة الاولي ان المعاملة الاشعاعية ادت الي خفض ال HMF ، حيث سجلت الجرعة الاشعاعية 20 كيلوجراي أقل مستوي من مركب ال HMF ، بنسبة خفض تصل الي 46.96 % بالمقارنة بالعينات الغير مشععة . التجربة الثانية ، حيث اظهرت النتائج ان طريقة الاستخلاص لها تأثير كبير علي تكون ال HMF في دبس البلح ، حيث سجلت طريقة الاستخلاص باستخدام الميكروويف اقل مستوي من مركب ال HMF و كذلك صفات جودة ممتازة .
