Populations of lactic acid bacteria (LAB) ranged from 103 to 109 / gm or ml were detected in 52 environmental samples including Kareish and Domiati cheese (soft type) , Ras cheese (hard type) , raw sheep , goat and buffaloes milk , yoghurt (zabady) , naturally acidified milk (Rayeb) , Ice cream , naturally fermented sausage , green naturally fermented silage as well as green - nonfermented plant using MRS and M17 agar plates
