Summary, etc. This study utilized methods of preserving fruit and vegetable juices with some natural substances that increase their antioxidant content, such as adding (nisin, lysozyme, ginger, and lemongrass essential oil), and preparing several mixtures of them to produce high-quality juices while extending their shelf life through refrigerated storage. The physicochemical properties, antioxidant activities, and their protective effect against MCF-7 breast cancer cells were evaluated. The effect of storage at 4 ± 1°C for eight weeks on the physicochemical properties and microbial count of the tested juices was also evaluated.

Summary, etc. تهدف هذه الدراسة الي حفظ عصائر الفاكهة والخضراوات ببعض المواد الطبيعية التي تزيد من المحتوي من مضادات الأكسدة فيها، مثل إضافة (النيسين، والليزوزيم، والزنجبيل، وزيت حشيشة الليمون العطري)، وتحضير عدة خلطات منها لإنتاج عصائر عالية الجودة مع إطالة فترة صلاحيتها من خلال التخزين تحت تبريد. وقد تم تقدير الخصائص الفيزيائية والكيميائية، والأنشطة المضادة للأكسدة، وتأثيرها الوقائي ضد خلايا سرطان الثدي MCF-7. كما تم تقييم تأثير التخزين عند درجة حرارة 4 ± 1 درجة مئوية لمدة ثمانية أسابيع على الخصائص الفيزيائية والكيميائية وعدد الميكروبات في العصائر المختبرة.
